Chef Cosme Aguilar, from Chiapas in southern Mexico, started this restaurant with his mother’s love of cooking and his sister and aunt’s help. He learned traditional dishes from Chiapas with them, and then worked in French restaurants before returning to his roots and cooking Chiapas-style meals. He also worked with various French chefs, learning their techniques and developing his own style. ..
